another recipe from cooking light, this one from the jan/feb issue from the superfast cooking section. and it certainly was fast! the recipe claims 6 servings, but they would be pretty skimpy portions. we'll get 4 generous or 5 normal servings out of it, i think. overall this turned out ok, especially the toasted pine nuts (yum), but didn't blow us away. i think a little lemon would give it a boost, so may spritz some on the leftovers.
