i had a few eggs in the fridge on the verge of expiring, so i decided to make spin pie this week. it's sort of a heftier version of quiche. i've made it with fresh and with frozen spinach and both work well. i think this is better with sharp cheddar and might work well with feta too, though would be a bit drier. i also subbed chicken stock for the milk this time because i didn't have any milk on hand.
also this week, stuffed peppers with the leftover sausage stuffing from last week. these were pretty good with a little cheddar melted on the top. i halved & seeded the peppers, then dropped them in simmering water for a couple of minutes, drained them and dried them well before stuffing them. placed them in a baking dish covered with foil and baked 'em at 350 for about 30 minutes.
and chili! always good on a cold day. i used ground beef from my freezer stash, but i often make this with crumbled veggie burgers instead (i like morningstar farms spicy black bean burgers).
